Yet another recycled idea, but this one LOOOONG died elsewhere and deserves to be brought back, especially with different people around these parts...
I'm currently eating leftover chicken fingers I made the other day, and they are really tasty, so I thought I'd share...
Basic chicken cutlets egg, beaten italian style bread crumbs french fried onions, crumbled (yes, the ones you use in the green bean cassarole) crumbled bacon (I used the Hormel real crumbled bacon) crushed red pepper fresh ground pepper garlic powder
Fill a bowl with 1/2 bread crumbs, 1/4 crumbled french fried onion, 1/4 cumbled bacon & add pepper and garlic to make spicy to your taste. Make sure it is well blended.
Dip your cutlets in the beated egg and then bread with the mixture. Place on a greased cookie sheet & put in the oven on broil for about 3 minutes per side, then bake at 450 for around 20-30 minutes, depending on the size of the cutlets.
These were quite tasty diced and tossed with some romaine lettuce and ranch dressing... or microwave with a leftover pasta or rice dish for a minute or two...

I am not much of a cook, but I did make a pizza the other night with NO recipe! Here is MY very own recipe:
I bought whole wheat pizza dough from Trader Joe's.
I then marinated chicken cutlets and portabella mushrooms in a fat free balsamic vinaigrette (also Trader Joe's), threw them on the grill and dusted them with garlic powder.
Once the dough was rolled out, and the "ingredients" were ready, I just piled everything on, with some sliced fontina cheese and sprinkled with a little pecorini romano.
Then I put my masterpiece in the oven and baked it at 425 degrees for ten minutes (do it longer if you like a crunchy crust) and VOILA'!
Yummy....
